The Sushikiri Knife
Sushikiri means sushi slicer in Japanese. It is a large knife that is similar in shape to a cleaver. The long symmetrically curved blade is designed to slice sushi rolls and battera sushi in one rolling slice without crushing them. that is exactly what this knife is designed for. These knives are popularly used in the Kansai (Osaka) regions. Basically Sushikiri is a double bevel blade, which means that both sides of the knife have a bevel that tapers towards the sharp cutting edge of the knife.
This knife is suitable for either left or right handed handlers . This knife has been sharpened on whetstone. Could have scratches , rust , strain , wear or tear as of used vintage knife.
